This beer is a combination of two beers, one is a porter and the other a bock.

The porter is brewed with a combination of specialty malts. Chocolate malt is malt that is roasted in a kiln until it is dark and gives off chocolate characteristics and dark color. The caramelized barley is barley that has been cooked in a way where the starch in the barley itself is caramelized. This brew has three hop additions.

Cascade hops are added in the first addition for bitterness. This well established variety of hops is an American grown hop. This hop is known for its citrus flavors and floral aroma characteristics.

Tettnang and Mt. hood hops are in the second addition for flavor and some bitterness. Tettnang variety is traditionally used in Germany and is well established in the United States and known for its fine aromas and slightly spicy bitterness. Mt. hood hops are known to be mild, pleasant and clean. Tettnang, Mt. hood, and cascade hops are all added at the end of the boil for aroma. This beer is brewed with an ale yeast which is a top fermenting yeast that ferments at warmer temperatures and adds well rounded flavors to this beer.

The bock beer is sweeter; mild in bitterness and lighter in color. It is brewed with caramelized barley. The caramelized barley is barley that has been cooked in a way were the starch in the barley itself is caramelized. This adds sweat caramel flavors to the beer.
This beer is lightly hopped with Mt. hood and tettnang hops for bitterness. Then Mt. hood hops are added at the end of the boil for aroma. The yeast used in this beer is a lager and ferments at the bottom. It ferments at lower temperatures and adds a clean crisp flavor.

The water for both beers comes from a fresh water aquifer which is some of the best water in the world for brewing beer. Nothing is added to the water, it has all of the minerals necessary to brew great beer.
